These baking/pizza stones are produced from authentic refractory clays, not simple stoneware. Only refractory stones are porous enough to absorb substantial moisture and bake up bread full and crusty. They are flat on both sides, so either side can be used. With more refractory material in the baking slab, pizzas bake faster and more evenly. Presto!
